When a cereal brand or bakery chain asks us to quote bulk freeze-dried fruit, the conversation rarely starts with price. It starts with which cut survives their line, what the moisture certificate says, and whether the factory can hold the same spec across repeat orders. Those three things decide whether the ingredient works at all, and they are the reason we run 37 freeze-drying lines instead of one big one.
What we control before fruit ships
Fujian Lixing Foods has been drying fruit and vegetables since 2006. Today the factory runs 37 freeze-dried lines with about 6,000 tonnes of annual output, under BRC, HACCP, ISO22000, ISO9001, KOSHER, HALAL and USDA Organic certification. That matters for bakery buyers because their customers audit the supply chain, not just the product.
Every batch is checked for moisture at or below 6%, which is the number that decides whether the fruit stays crunchy in a cereal cluster or turns soft in the bag. We also run metal detection on the line, and the moisture test follows the vacuum method at 70°C for four hours. The certificate you get with the shipment is from that batch, not a standing document.
Which fruit and cuts bakery buyers actually order
Strawberry is the most requested, across slices for cakes and dices for cereal. Our Freeze Dried Strawberries ship whole, sliced, diced or powdered, with sugar-free and sugar-added options, so the spec can match the recipe rather than the other way around.
Mango and raspberry are the next two. Most bakery brands we supply run their own label. We pack from 10 g retail bags to 10 kg cartons, with double PE bags inside and carton outside as standard. MOQ starts at 100 kg, which is low enough to validate a recipe on a real production line before you commit to volume. Delivery runs around 30 days from order, shipped from Xiamen.
